Creamy Ground Beef and Cauliflower Rice Casserole
This low-carb ground beef casserole is the perfect dish for you or your family after a long day! It's delicious and kinda like a carb-free lasagna!
WHAT IS GROUND BEEF AND CAULIFLOWER CASSEROLE?
Low-carb ground beef and cauliflower casserole can be described (by me, at least) as lasagna without the sauce and the carbs. The use of Italian spices gives it a very delicious, Italian flavor while changing up a few ingredients.
Don't misunderstand, this isn't meant to be a lasagna replacement.
It is, however, a delicious dish that is something different than you make on a consistent basis. It's meaty, cheesy, and delicious!
LOW-CARB GROUND BEEF AND CAULIFLOWER CASSEROLE INGREDIENTS
Before you try to make this recipe, you'll want to make sure to have the following ingredients on hand.
- 1 lb ground beef, fat content of choice
- 1 cup sour cream
- 1 package (10 ounces) frozen cauliflower rice
- 8 ounces shredded Italian blend cheese
- 1/2 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- salt and pepper, to taste
After you have all of this, you're set and ready to cook!
HOW TO MAKE GROUND BEEF CASSEROLE
- Begin by browning beef (fat content of choice) in a non-stick skillet and a meat chopper
- While the beef is browning, preheat your oven to 400˚F
- Remove your beef from the pan and add the chopped onions to the leftover beef fat; cook until soft
- Stir in garlic and cook for around 30 seconds
- Drain beef fat from skillet, if desired, using a slotted spoon to reserve onions and garlic
- Add beef to the cooked onions and garlic in the skillet, adding spices; Italian seasoning, paprika, and salt and pepper, to taste
- Cook the packaged cauliflower rice, following package directions
- In a 9×13 baking dish, combine cooked cauliflower rice and sour cream; add salt and/or pepper if you wish
- Form the cauliflower mixture into a layer and spoon the beef mixture on top
- Cover with Italian cheese (or cheese of choice)
- Bake for 20 – 25 minutes until the cheese is bubbly
- Remove from the oven, serve, and enjoy!
WHAT KIND OF GROUND BEEF SHOULD I USE?
Ideally, for a low-carb or keto diet, you want to aim for using higher-fat meats. Generally, a 70/30 ground beef would be the best for a recipe such as this.
Fatty meats, however, do cook down a lot more since there is more fat to cook out. While this isn't a huge deal, that simply means however much you're using doesn't go as. far.
For instance, one pound of 70/30 ground beef might cook down to 3/4 of a pound or less.
Ground beef that is lower in fat will end up being more meat and less fat after browned but is more expensive.
Really, the choice is yours.
STORING LEFTOVER GROUND BEEF CASSEROLE
Storing your leftover ground beef and cauliflower casserole is super easy and simple!
As we always suggest, use glass storage containers for containers that are not only versatile but can be used in the oven and microwave as well.
Obviously, you can use whatever storage containers you may have on hand.
Place the leftovers into the refrigerator where they can stay for 4 – 5 days. If you don't eat them within that time frame, it's probably best to discard them.
REHEATING CASSEROLE LEFTOVERS
Reheating this ground beef casserole couldn't be easier! There are a couple of quick ways you can reheat your leftovers.
REHEATING IN THE MICROWAVE
The quickest and easiest way to reheat your leftover casserole is in the microwave. To do this, simply spoon out the amount you are wanting to reheat onto a plate or into a bowl and place it in the microwave.
Microwave on high for 1 minute, stirring at the 30-second mark. Remove from the microwave, check to ensure it is heated through, and eat.
If your casserole serving needs more time, heat in 15-second increments until it reaches your desired temperature.
USING THE OVEN
If you'd like to heat your low-carb ground beef casserole more slowly, you can use your oven. It will give you a deliciously warm meal that's been heated through.
Preheat your oven to 350˚F and place your leftover casserole into an oven-safe baking sheet. Heat for 10 minutes, stirring occasionally, then check for the desired temperature.
If your casserole isn't heated through yet, continue to heat in the oven in four-minute increments until the desired level of temperature is reached.
